Thai fish burgers in lettuce cups
These burgers look amazing and taste just as good. You won't miss the bun.
400g white fish fillet, skin off and deboned
100g green beans, finely chopped
1 1/2 tbsp Thai red curry paste
2 green (spring) onions, finely chopped
2 tbsp coriander,finely chopped
1/2 tsp freshly ground black pepper
cooking oil spray
1/2 Lebanese cucumber, shredded
2 tbsp coriander sprigs
lime wedges
6 small iceberg lettuce leaves, to serve
Serves 2
Cut fish fillet into chunks. Using the pulse button on your food processor, process fish very gently until just broken up. Transfer to a large bowl. Add beans, curry paste, onion, coriander and pepper, and stir until well combined.
Lightly spray a non-stick frying pan with oil and heat on medium. Divide fish mixture into six patties and place in pan, pressing down lightly with a spatula to form burgers. Cook for 3-4 minutes each side until golden and cooked through.
Place patties on a plate with cucumber, coriander and lime, and serve with lettuce
