Stir-fried tofu with oyster sauce
Stir-fried tofu with oyster sauce
  • 250 g (9 oz) firm tofu
  • 2 tablespoons oil
  • 1 garlic clove, crushed
  • 1 teaspoon grated ginger
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 4 oyster mushrooms, quartered
  • 1 spring onion (scallion), cut into pieces
  • 1 baby bok choy (pak choy), quartered
  • a handful coriander (cilantro) leaves


1. Cut the tofu into bite-sized pieces. Heat a wok over a medium heat, add the oil and heat it until it is very hot and almost smoking. Cook the tofu until it is golden brown on all sides, making sure you move it around gently or it will stick and break.

2. Add the garlic, ginger, oyster sauce, soy sauce and sugar, then toss until well combined. Add the oyster mushrooms, spring onion and bok choy, then simmer until the sauce has reduced a little and the spring onion and bok choy have softened slightly. Garnish with coriander leaves.
