Potato and leek slow cooker soup

- 2 leeks
- 1 onion
- 4 large potatoes
- 2 cups chicken or vegetable stock
- 2 cups water
- A pinch of salt
Fill your house with the delicious aromas of a slow cooked classic.
Prepare leeks by removing green tops, slicing white stalk into rings and rinsing. Peel and slice onion into rings. Peel, slice and rinse potatoes.
Add all ingredients to slow cooker. Liquid should just cover solid ingredients.
Set slow cooker to low and cook for approximately six hours, until soft.
Using a hand blender, blend until smooth.
Salt to taste, and serve with fresh crusty bread.
