Ingredients

  • 500g chicken breast
  • 1 tbs olive oil or rice bran oil
  • 1 medium onion
  • 2 tbs fresh garlic
  • 1 tbs fresh ginger
  • 1 medium tomato
  • 4 celery sticks
  • 3 large carrots
  • 2 large potatoes
  • 1 large parsnip
  • 1 swede
  • 1/2 cup green beans - sliced into 2cm pieces
  • 3/4 cup rissoni pasta (tiny pasta or soup pasta)
  • 6 cups chicken stock
  • water
  • salt and pepper to taste

A hearty, soul warming one pot meal that soothes the aches and worries of life.

Method

In a large saucepan saute onion, garlic and ginger with olive oil. When onion is translucent add chopped tomato and saute for a minute.

Add diced chicken breast and cook for a few minutes then add all vegetables.

Cover with 6 - 8 cups of chicken stock, simmer for approx 1 hour until root vegetables are soft and then add rissoni pasta and simmer until pasta is cooked. Add salt and pepper to taste, serve with crusty bread.
