Ingredients

  • 1 litre reduced fat milk
  • 1/2 cup medium grain rice (Arborio)
  • 3 tablespoons cane sugar
  • 1/2 tsp vanilla sugar

Easily prepared and quick to bake this is a rice pudding recipe that you will want to cook again and again.

Method

Preheat oven to 150 degrees C. Add all ingredients to a 6-8 cup casserole dish.Bake 1 1/2 hours. (You can substitute the vanilla sugar with 1/2 a dessert spoon of vanilla essence if preferred).

I suggest you place a tray underneath the casserole dish to catch any milk boil-over.

Just peel off the milk scum when cooked and sprinkle with nutmeg or cinnamon to serve. Can be served hot or cold - on top of your favourite cold tinned fruits.
