Loaded Mini-Meatloaves

If this doesn’t impress the children and adults in your family, I don’t know what will! These mini meatloaves are loaded with ketchup, mashed potato and bacon and are so cute, they almost look like cupcakes. Serve them up at dinner or use a mini-muffin tray to make canape sized versions for your next drinks party.

Loaded Mini-Meatloaves

Ingredients

  • For the meatloaves
  • 500g pork mince
  • 500g beef mince
  • 75g parmesan cheese, grated
  • 75g fresh breadcrumbs (about 2 slices of bread)
  • 2 tablespoons mixed fresh herbs of your choice (I used parsley and thyme), finely chopped
  • 1 egg
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1 tsp ground coriander
  • 1 tablespoon worcestershire sauce
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons olive oil
  • For the mashed potato
  • 750g potatoes, peeled and diced
  • enough water to cover
  • 50g butter
  • a little milk, warmed (about 1/2 cup, give or take)
  • salt to season
  • Toppings
  • 200g bacon, diced and fried until crisp
  • finely snipped chives

Method

Preheat your oven to 220°C. Prepare a muffin tray by lightly greasing with a little oil.

Gently saute the onion and garlic in a pan over medium heat until soft and translucent. Set aside to cool.

Combine the pork, beef, parmesan cheese, breadcrumbs, herbs, egg, salt, pepper, allspice, nutmeg, ground coriander, worcestershire sauce and the cooled onion mixture. Squish together using your hands until thoroughly combined.

Using an icecream scoop (if you have one, otherwise a spoon will do), scoop out portions of the meatloaf mixture into the prepared muffin tin holes. Bake for around 20 minutes or until browned and cooked through.

Meanwhile, to make your mash, place the potatoes into a saucepan. Cover with cold water then bring to the boil. Simmer for 15-20 minutes, until completely cooked through. Drain well and return the potato to the pan. Mash with a masher, adding the butter, salt and just enough milk to get the consistency you desire.

To assemble the meatloaves, squirt a little ketchup on top of each loaf. Then you could either spoon or pipe the mashed potato on top of each one, followed by the bacon and snipped chives.
