Lemon Butter Cake

- 130g butter
- 3/4 teaspoon vanilla bean paste
- 1 1/4 cup caster sugar
- 3 eggs
- 1/2 cup milk
- 1 cup plain flour
- 1/2 cup self-raising flour
- 1/2 teaspoon baking powder
- Zest of 1 lemon
A delicious recipe and so simple. Great with a cup of tea on a lazy afternoon.
Preheat oven to approximately 150 degrees (Celsius).
Prepare and grease a 24cm round cake tin.
Add all ingredients together into one mixing bowl. Using an electric mixer on low speed, combine ingredients. Then increase to medium speed and mix for approximately 2 minutes until cake mixture is smooth.
Pour cake mixture into greased cake tin and bake for about 75 minutes. Cake is ready when a skewer is inserted into the centre and comes out clean.
Allow cake to cool, and then dust the top with icing sugar to serve.
