Easy Beef Fajitas
1. Combine the oil, garlic, chilli, oregano, paprika, cumin, lime juice, onion and capsicum ina small bowl and stir to combine well. Add the meat, toss to coat well, then cover and refrigerate for 1 hour.
2. Heat a frying pan over high heat, add the steak mixture and cook, stirring, for 3–4 minutes or until the meat is cooked but still a little pink in the middle. Cook a little longer if desired.
3. Place a frying pan over medium heat and when hot, add the tortillas one at a time and cook for 3 minutes or until soft and bubbles appear on the surface.
4. To serve, divide the steak mixture between the tortillas, then top with the tomato, avocado and coriander. Serve with lettuce leaves and lime wedges on the side.
