Ingredients
- 1 handful chocolate mint leaves (or other mint leaves, if chocolate mint not available), plus extra sprigs*
- 3 tbsp caster sugar
- 2 litres Bilpin apple cider
- * Chocolate mint is a variety of mint with a strong taste of chocolate.
Method
Place 1 handful mint leaves in a mortar with sugar and pound to a paste. Transfer to a bowl and add 1 litre water, stir to dissolve sugar and set aside for 1 hour. Strain through a fine sieve into a freezer-proof tray and place in the freezer until set.
To serve, remove ice from container and place in a clean tea towel. Tie ends together and bash to a coarse-flake consistency.
Fill glasses (or a jug) with ice and extra sprigs of mint. Top with cider and serve immediately.
