Ingredients
- 600 grams lean minced beef
- 1 large zucchini grated finely
- 1 large carrot grated finely
- 1 medium brown onion finely chopped
- 1 teaspoon minced garlic
- 3/4 cup basmati rice
- 1 x 400 grams tin of diced tomatoes
- 1 x 700 mls passata sauce
- 1/2 cup fresh basil and oregano leaves finely chopped
- 1 cup water
- salt and pepper to season as required
Tucked away inside these delicious morsels you'll find mince, rice, zucchini, carrots, and fresh herbs swimming in a tasty sauce. A quick and healthy one-pot dish your kids will love to help make and love to eat even more! Freezes and reheats well.
Method
To make the meatballs, combine the mince, zucchini, carrot, onion, garlic, rice, and herbs in a bowl. Using a tablespoon to measure, roll the mixture into balls. Refrigerate the meatballs whilst you are preparing the sauce.
To make the sauce, combine the tinned tomatoes, passata, and water in a 10 cm round dish or saucepan and bring to the boil. Season with salt and pepper to taste and stir. Reduce the heat to low, and carefully drop the meatballs into the sauce. Make sure that all of your meatballs are covered in the sauce. Simmer for 30 mins, or until the meatballs and rice are cooked through. Enjoy.
You can spice this dish up by adding to the meatball mixture a teaspoon of dried chilli flakes; or add 1/4 cup grated cheese for even tastier meatballs the kids will love. Delicious served with warm crusty bread to mop up the sauce.
